Unfortunately, nobody wanted to buy them. Not knowing what to do with all the extra produce, vendors began carving the radishes into ornate shapes and using the vegetable sculptures to lure customers to their produce stands. Amazingly, it worked. The novelty items became so popular that farmers began leaving their radishes in the ground long after harvest season, letting them grow into bizarrely shaped behemoths. Now, December 23 is known as Noche de Rabanos (Night of the Radishes). Oaxacans celebrate it each year by gathering in the town square to display and admire elaborately detailed radishes modeled into saints, nativity scenes, and even the town itself.””
